This is a very good casserole. I did cut the sugar to 1/4 cup. I used all brown sugar. I also added about a tablespoon of maple syrup which added to the sweetness. I agree with cmarchant if you reheat this it must be in the oven not microwave! Thanks for sharing!!

I made this for a Christmas get together and everyone loved it. My family considers themselves sweet potato experts and it met everyone's approval. I baked the sweet potatoes, peeled and mashed them up the day prior to making the casserole and it saved a lot of time.

I made this for my family's Thanksgiving get-together and it was a huge hit. Even the few people that do not like sweet potatoes liked this casserole and I went home with an empty dish. I was told I am supposed to make this every year from now on as a new tradition! As a side note, this says it serves 8-10, and because we had over twenty, I made 1 1/2 batches. This was not necessary at all. The original recipe is more than enough for a big crowd. I ended up putting the extra in a separate 8x8 dish and we had that at a different time.

This is a delicious casserole and was my favorite thing on our Thanksgiving table. One Cupid a lot of sugar. I saw the review from the woman who cut it to 1/4 cup and was happy with it. I compromised and used about 1/2 cup total - half light brown sugar and half granulated sugar. It was the right amount of sweetness without being too sugary. I liked the corn flake & pecan topping, but it doesn't reheat as well in the microwave. It becomes a little chewy instead of crisp, but it was still good. I love the pecans. My vegetarian son preferred the marshmallow topping. This recipe allowed us each to have it the way we liked it.

This is delicious because nothing overpowers the sweet potatoes. One adjustment that I made is that I cut the sugar by 3/4 of a cup. Using only a 1/4 cup made all the difference in the world! More than that makes it really sweet. This was the perfect balance! This is going into my personal cookbook. Yum-o!

I am only giving this 4 stars as I thought it was too sweet. My family, even the non-sweet potato lovers, really liked it. I will definitely make it again, but will cut the sugar in half. Based on other reviews this should do the trick.

This is the second Thanksgiving I have made this dish. I made it the first time because in our house we have the eternal debate on marshmellows vs. pecan/maple sweet potatoes and this seemed like a good compromise. It turned out to be the hit of the party and was requested again. This year didn't disappoint and I have to say, this is probably the BEST Thanksgiving recipe I have! You will make this once and it will go into your menu box every year after.

My entire family LOVED this recipe. I have never liked sweet potatoes much until trying this recipe. My family can't wait to have it again this Thanksgiving. Its now a Becher family MUST. The brown sugar, cornflakes, and pecans layered diagonally next to the marshmallows gives the casserole such an appealing look. YUM!

I never would have guessed I would rate a Sweet Potato Casserole recipe as "outstanding," but this one certainly is. I don't typically like Sweet Potato Casserole, but my husband specifically asked for it one Thanksgiving, I found this recipe, and I've been making it ever since. The flavors are wonderful, and the combination of crunch and marshmallow on top means everyone is happy. Truly outstanding.

at my husband's request i made this for thanksgiving (my family did roasted squash instead of a casserole), and everyone loved it! i used splenda brown sugar mix instead of regular sugar and lo-fat vanilla almond milk instead of whole milk. it was perfectly sweet (which was a relief as i was nervous it would be super sweet). we threw away the extra crunchy mix which was a mistake. it would have been great for left-overs. a definite addition to our thanksgiving menu from now on.

WOW! This is fabulous. My family prefers marshmallow topping so I don't use the cereal/pecan topping combo, but that doesn't matter. The sweet potatoes are delicious underneath - no topping required. I also cooked the sweet potatoes the day before and stored in the fridge which saved me oven time the next day.

FAQs

Why put eggs in sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy. Make sure to cool the mash slightly before adding the egg so it doesn't scramble, and to stir well so there are no streaks of cooked egg white in the finished dish.

What's the difference between sweet potato pie and sweet potato casserole? ›

The difference is that sweet potato casserole can either have a toasted marshmallow top or a crunchy brown sugar/nut top and is made with brown sugar in the casserole. Sweet potato pie is made with white sugar, has nothing on top, but can be served with whipped topping.

Why do you soak sweet potatoes before baking? ›

The cold water bath helps rinse the starch off the sweet potatoes so they're a bit more crispy. That said, if you do not have the time, you can still get crispy baked sweet potato fries by using high heat and a little drizzle of olive oil.

Why is my sweet potato casserole so watery? ›

Why is my sweet potato casserole watery? If you overcook your sweet potatoes, they may begin to absorb too much liquid, making them watery. It's important to cut your potatoes into equal-sized pieces so that they all cook at the same rate. Make sure to remove them from the steamer as soon as they are fork-tender!

How do you make sweet potato casserole not watery? ›

You should always bake sweet potatoes. Baking intensifies the flavors. Boiling drains out flavor and also makes the sweet potatoes wet. If you bake the sweet potatoes and don't add liquid, you will not have watery sweet potato casserole.

Can I substitute canned sweet potatoes for fresh sweet potatoes? ›

Canned or frozen sweet potatoes may be substituted for the fresh form in any recipe calling for cooked sweet potatoes as the starting point. Canned sweet potatoes are generally smaller in diameter because of their better canning qualities.

Are candied yams and sweet potato casserole the same thing? ›

While both are sweet sides, they are different. Sweet potato casserole involves mashing the potatoes, turning them into a custard of sorts, and then topping them with marshmallows and/or pecans before baking. We don't do any of this when making candied sweet potatoes!

What is the healthiest way to eat sweet potatoes? ›

Boiling sweet potatoes retains more beta-carotene and makes the nutrient more absorbable than other cooking methods such as baking or frying. Up to 92% of the nutrient can be retained by limiting the cook time, such as boiling in a pot with a tightly covered lid for 20 minutes.

Is it better to peel sweet potatoes before or after boiling? ›

There is not much difference between boiling sweet potatoes with the skins on versus peeling them, but you will get a boost of fiber and potassium if you keep the skin on. The skin also adds a subtle texture to each bite. If you're looking for a smoother mash, peel the potatoes first before boiling.

Do sweet potatoes taste better baked or boiled? ›

Like David Wilcox says, baking the sweet potato produces a deeper flavor. I find that baking them brings out a sweeter flavor as well. But what you need to do is experiment and bake a pie using sweet potatoes that have been prepared both ways. You might find that you like it better when they are boiled.

How to bake sweet potato in oven Martha Stewart? ›

Pierce potatoes all over with the tines of a fork and bake in oven, directly on rack, until soft and caramelizing, 1 1/2 hours. Slash the tops of potatoes open with the tip of a sharp knife and push ends of each potato toward each other to open. Divide butter, salt, and pepper among potatoes and serve.

Is it better to bake sweet potatoes in foil or not? ›

Wrapping the sweet potatoes in foil ensures that they don't dry out too quickly, and allows you to add aromatics if desired. Unwrapping the sweet potatoes and increasing the oven temperature produces charred, roasted flavors and caramelizes converted sugars.

Are yams and sweet potatoes the same? ›

No, yams and sweet potatoes are not the same. Yams have rough, dark brown skin that is often compared to tree bark, and their flesh is dry and starchy like a regular potato. Sweet potatoes have smooth reddish skin, softer flesh (when cooked), and a sweet flavor.

What is the purpose of adding eggs in baking? ›

What Eggs Do in Baking Recipes. Eggs play an important role in everything from cakes and cookies to meringues and pastry cream — they create structure and stability within a batter, they help thicken and emulsify sauces and custards, they add moisture to cakes and other baked goods, and can even act as glue or glaze.

Does egg thicken casserole? ›

The proteins in eggs coagulate or set at different temperatures. This results in thickening but it means that eggs must be cooked gently and heated carefully or they will scramble rather than thicken a sauce or other mixture.

What is the purpose of putting an egg in mashed potatoes? ›

Adding egg yolks to a pot of mashed potatoes is an easy, dairy-free texture and taste upgrade that doesn't require any special techniques. The yolks harbor all the flavorful fats and emulsifying components and will thus effectively unify the fat and water in potatoes, translating to a smoother, uniformly creamy pot.

How can I thicken my sweet potato casserole? ›

Everything you'll need to make this recipe.

Choose orange sweet potatoes for the best flavor and sweetness. Brown sugar adds a depth of flavor with a hint of molasses and helps create a caramel-like sauce. All-purpose flour will help thicken the sauce and give some structure.
