I'm would like to make the Sticky Toffee Pudding ahead to serve the next day. Can I freeze it or put it in the fridge? Thanks.

Our answer

Nigella's Sticky Toffee Pudding (from AT MY TABLE) is a slightly darker version of the classic pudding thanks to the addition of treacle (molasses) and dark brown sugar. The sponge is at its best on the day it is made as if the whole sponge is reheated in an oven there is the risk that it can dry out a little. The sponge will also become firmer when it is stored in the fridge. The pudding should not be eaten piping hot but needs to cool for at least 30 minutes and if it is left in a warm place after it comes out of the oven then it could be baked an hour or so in advance. The sauce can be made a day ahead and stored in the fridge.

For leftovers we recommend storing the sponge and sauce separately in the fridge for up to 5 days. Cover the sponge tightly with clingfilm (plastic wrap) and put the sauce in an airtight container. You can warm through individual portions of the sponge in a microwave for about 1-2 minutes on low power, following the manufacturer's instructions, and reheat the sauce in a saucepan. If you have to bake the sponge a day ahead then we would suggest reheating the individual portions of sponge this way before serving, but bear in mind that the sponge will not be quite as light and moist as when freshly baked.
